Kitchen should have at least one sharp knife for preparing food. It is a blade with handle used in cutting meat, vegetables and fruits. The blade is the one who cuts the food and it could be made in different materials. Knives come in variety of design and sizes for a certain purpose or usage.
The materials for making a knife evolved form stone to stainless steel. There are knives made in carbon steel. These kinds of knives are easier to sharpen that stainless steel. It is inexpensive but can easily get rusty and it may give metallic flavor to the food. Maintaining a good carbon steel knife needs to be taken cared of. After using it, the blades must be cleaned and dry it after washing. Add oil on the blades to avoid rust to form. High carbon stainless steel is the improved version of carbon steel and stainless steel. It does not stain and does not need sharpening often. It is stronger and it gives quality cuts. Stainless steel is softer than the carbon steel but it does not tarnish. Laminated are tougher than other blades but can be easily damage. It is a layer of hard steel and covered with tougher steel. Titanium blades are lighter than other blades and much flexible. It does not leave any taste on the food. Ceramic knife is harder than the other knives and that causes it to break when not sharpened properly. Lastly, are plastic blades that are specifically used in cutting vegetables to avoid discoloration it not sharp. But since it is plastic and by using it frequently it may sharpened in time so appropriate covering or protection is necessary.
